This beautiful winter salsa is the perfect blend of tangy, sweet, spicy and salty! I dare say, it's even super nutritious so you can eat the whole bowl without feeling guilty. It's the ideal holiday appetizer to give yourself a break from all the yummy but oh so not healthy treats we typically consume this time of year. Serve with corn chips. Ps. This salsa also makes an amazing topping for baked fish, so keep that in mind if you have leftovers!

 5 Satsuma Oranges
 2 Jalapenos (use just a couple seeds for mild or as many as you like if you want it spicier
 1 Red onion, diced
 1 cup Red Kale, chopped finely
 ½ cup Cilantro, chopped finely
 ½ cup Fennel, diced
 ½ Lime, juiced
 1 tsp Cumin
 ½ tsp Cardamom
 ½ tsp Allspice
 2 tbsp Olive Oil
 Salt and Pepper, to taste

Combine all ingredients in a bowl. Cover and refrigerate for at least 1 hour or overnight.

Serve with corn chips.
