Is there a better way to end a bountiful summer than with a simmering pot of fresh vegetables from the garden or market? There's really not. Oh, and it's another one-pot meal so it's easy to make and easy to clean up. It also needs some time to cook so it's perfect for making ahead of time.

 8 ripe tomatoes, halved
 1 eggplant, diced
 2 zucchinis, diced
 2 peppers, sliced (use colourful peppers to add a touch of beauty to your pot)
 2 tbsp fresh Oregano
 salt
 pepper
 olive oil
 ¾ cup parmesan cheese, grated

Heat olive oil in a large pot or dutch oven.

Brown veggies. Traditionally, you would brown each veggie one at a time, but let's keep things easy and add everything except for the tomatoes.

Season liberally with salt and pepper.

Add tomatoes.

Add oregano.

Check seasoning, and add more as needed.

Cook on low until veggies melt into each other, creating their own broth.

Finish with parmesan cheese and fresh pepper.
